I don't think macOS Safari and iOS Safari are the exact same, I may be wrong but that's what I think. I remember a few years ago the AppleTV couldn't play 4k YouTube videos and that was because Google used a format that Apple was against implementing(Because it was inferior to what Apple already had if I remember correctly)

YouTube stores all of their video files and audio files separately. It's a clever way of saving server space—you can have all of the different video files (at a bunch of different resolutions and video codecs), and then a few audio files (at different bitrates and formats), and then on the fly pick the best video file for the user, pick the best audio file for the user, and play them back at the same time. For example, here's all the individual files that YouTube generates/stores for the Costa Rica video from your post.
In a browser, YouTube uses Media Source Extensions which allows them to combine those video and audio streams, and do things like let you switch resolution without the video stopping (or even dynamically switch the resolution based on available bandwidth without interrupting the video.)
Safari on iOS doesn't support Media Source Extensions. So in addition to the multitude of individual video-only and audio-only streams YouTube generates, they also generate a few versions that include both the video and audio in one file—but only up to 720p. That's why Safari only shoes those options, it's all it's capable of playing, because there's no assembly needed by the browser. (Interestingly, Media Source Extensions is implemented in Safari on iPadOS, which is why you'll see more resolution options there.)

How does Apple "try to worsen the experience"? The obvious guesses are that Apple hadn't gotten to implementing it in a way they want to be performative.
Or maybe Apple intentionally won't enable it because making Safari work smoothly means deciding not to support certain popular technologies, and forcing everyone else to adapt—perfect example of that is Apple's refusal to support Adobe Flash. Was Apple's motivation to not support Flash "trying to worsen the experience"?

If you are on cellular, your carrier caps it.. 4k is like 1 gigs per minute so you will strain the network. 1080 is probably 50 megs per minute… so you have to change your plan or activate HD viewing. But the app allows it. I just don’t use because you can not block ads. In safari you can, I use adguard pro. I rather don’t have ads then have 1080… specially when jumping from video to video.

No thanks, never. It’s always been a free service and I am not about to pay for it now. Youtube is a shit platform. I had to install a browser extension just to be able to watch age restricted videos even though I’m way over the age of 18. And that’s because EU made it so YouTube had to require either your ID or your credit card info to verify your age, none of which Google has any business seeing. So fuck YouTube and fuck EU too. Never paying a cent to watch YouTube. Adblock is free.

I didn’t mind the original little banner ads at the bottom of the video. They were not intrusive and were never a problem. The video ads are what I have a problem with. I’ve used adblocker from the day I installed Chrome.

I only use it when I need something technical, like.. how to remove a transmission of an f250.. or idiots on cars when I want to burn time… replacing power steering on a 24 foot boat… stuff like that. I’m not spending a dime on google. Adblocker is a blessing.

Tracking, ads, bad UI (imo) and lack of PiP all push me to the web. I’ve got an awesome extension called vinegar which adds the native player, blocks, ads and more. It’s well worth the price imo

I’m sure it does. For me and many others, as you said, it’s not worth it. And personally, paywalling a system feature (PiP) which is free on android is just absurd. And on top of that, as I said, I hate the YT UI. Vinegar replacing that UI with the native one is awesome for me. And it also works on my iPad and Mac, where I watch the majority of my content

Google locks the max resolution on the YT website to 720p on mobile to push people to use the app. There’s an awesome Safari extension called Vinegar which will let you watch up to 1080p. Also replaces Google’s player with the native one, removes ads, adds Picture in Picture, and is built by an awesome dev. Well worth the price imo

The app might be different.. i dont use the app at all. I use the browser but I’m fine with the 360-720 resolution. It could be your carrier too, i dont have the HD turned-on thru my carrier so I’m just used to it, i mean… is a 6 inch screen. But I heard the app could be different, up to 1080.
