You’re missing my point. Using an app to order something vaguely similar to Lucy’s food is just not the same. Even if the food could be duplicated (it won’t), it’s just not the same experience.

My point was to give the lady a space to work that isn't out in the pgh winter weather. So many kitchen spaces are sitting empty rn along Penn & butler.

That's different. I'd certainly like to see her in a restaurant if it made business sense (it probably wouldn't). But that's not a ghost kitchen.
