I read somewhere that the only reason the Appalachians aren't taller than the big European and Asian mountain ranges is because they used to be, but they're so old that they've sunken over time.

Yes, at one point they were much like the Rocky Mountains and have essentially eroded into nubs. They are incredibly old.

Imo because of the more diverse foliage, they’re more scenic than the Rockies

Yup. Lived in CO for 5 years. The Rockies are special too for various reasons but I prefer the Appalachians for everything else besides skiing.
