I just asked my dad if he knew how the tradition started in our family and he said “I do not. Interesting question. It just seems like it was always here.”
It is cream cheese and cheddar cheese, pimento, green bell pepper, a splash of Worcestershire sauce, rolled in chopped walnuts. It’s been a party favorite for thanksgiving and Christmas all my life.
Here are approximate proportions, it’s kind of hard to go wrong as long as it’s close to this:
1 package cream cheese (easier if its a little softened)
Freshly grated cheddar (I like sharp, but any will work), about same amount as the cream cheese.
1 tbsp pimento
1/4 cup finely chopped green bell pepper (honestly i think it started getting added so you have red and green inside, it doesn’t add much flavor but does add crunch)
Splash of Worcestershire sauce
Mash mash mash until it’s all incorporated, roll into a ball
Roll on chopped nuts (I like walnuts the most)
Let chill in fridge for a while (an hour-overnight.
We usually make it a day in advance but even in a pinch a little chilling is better than none)
