I went Series X over PS5 while I wait for a ps5 slim and I love the series x. I've always had playstation and Xbox together but so far I'm getting to play the Playstation exclusives on my gaming pc so the need for ps5 not so great. If you love the xbox ecosystem then go for the series x as it's a beast.

GTX 1080 is an old card and current games require newer RTX graphics cards to have parity with the console versions. If you don't want to upgrade to a modern graphics card then PS5 or Xbox Series X or S are right for you.

There's some very good Anbernic handhelds that have Bluetooth for controllers and mini HDMI out to connect to the tv and supports almost every game system for emulation. I have an Anbernic RG353P (SNES design) and I'm really satisfied with the device for both handheld gaming and using it on the big screen with Bluetooth controllers. Great for old couch co OP games.

Having access to all of your Xbone, 360 and OG Xbox games on the Series X is great. Adding disk based games and S/X Optimized games and Gamepass Ultimate and you're set. If you have a PC or plan to get one you'll be able to play a fair amount of the Sony exclusives as they're headed to PC after their playstation exclusivity ends.

The X has more than a bit more storage. I have 2 enormous Call Of Duty games installed on the internal storage with even more games installed (plus external HDD for 360 and Xbone games.) It's totally not a waste of money for what you get with Series X. The Series S with its 300gb usable is a waste of money.
