Shadows can actually move faster than the speed of light. Also, space itself can in theory move faster than the speed of light. There are actually probably many physical objects traveling faster than the speed of light relative to us because although they travel less than the speed of light in their own reference frames, the expansion of the universe causes objects very far away from us to be moving at a substantial speed so that extra speed they get from space itself carrying them farther away from us could put them over the top of the speed of light.

Humans have limited readout speed from their eyeballs as well. There's a lot of image processing that goes on. They'll probably just increase the readout speed of cameras or use global shutter. BTW, the problem you are describing is called rolling shutter.
