When was this? Isn't this late in the season? And when will these be ready to eat?

We made it yesterday. And it's the normal time of year to make it, I think. We did it the same time last year. And it will take 2-3 months to cure.

This is the towards the end of soupy making season, but there are still a couple more weeks. We usually start in late December and roll through mid February. This year we might have to shut it down early due to the damp winter.
