Interesting, would the convection setting on a normal oven work?

Absolutely. Before I got my combi I used a convection oven.

You're welcome. Every oven is different (except the pricey ones). So, experiment around. Just make sure that the favas are in a single layer. Parchment paper makes for really easy cleanup.
