Sharpness in cheeses is sort of like bitterness in that it has a very strong initial taste.

Kinda like sharp cheddar. In this case the provolone has an almost "funky" strong taste like any aged cheese usually does. It's delicious and if you have a primo subs near you they're definitely worth checking out. Really good subs and quality meats and cheese.

Great sandwich. Solid bread, nicely shredded lettuce, meat looks great and can't forget the hot peppers.
