Never had catfish until I was stationed in Texas (I'm from NY).
It's still one of my favorite fish dishes, but it's hard to come by up here unless I make it myself.

No no, I'm not judging. I was just going to suggest trying mayo if you never have. In my experience, it takes longer to burn, making the bread crisper but less burnt.
Even if your sammich was perfect, I would have suggested it.

Texas Chili just means no beans or tomato sauce if I'm not mistaken.
My family would lose their minds if I put raw onion on their chili, too, but I like it.
Everybody has preferences.
