If it’s concrete than use tapcons. Just make sure they don’t go into the hollow portion or they won’t bite.

I would suggest you cut out the wallboard and put 2x4’s between the studs where the mount holes are and secure the studs. Then patch the drywall and get some 3” screws and secure the mount to the 2x4’s. There is no drywall molly, toggle, etc that will stand up to time.

I have replaced mine 3 or 4 times over the last 20yrs. The plate holds the microwave while you hold it in place and screw in the top lag bolts. Your 75% is perhaps correct until the lag bolts are secured. Once the lag bolts are secured almost all the weight is on them. It’s almost as if the plate is there to help a single person install. How much you bust your back while getting it on the lip of the plate is irrelevant. A single screw for the plate into a stud is sufficient so long as it’s somewhere in the middle of the plate and not all the way to one end of it. Toggle bolts for the rest will suffice. Remember…measure twice drill once when drilling into the uppers for the lag bolts.

All of the weight of the microwave is on the 2 lag bolts in the top holding it to the upper cabinet. Having the bottom bracket only hit 1 stud is fine so long as the upper cabinet is secured into studs and sturdy

There is probably a bracket that it is sitting in on the back. Usually a long bracket with a channel the microwave sits on the bottom. Try lifting the microwave up and out at the same time. If it is wedged in you probably have to pull it out harder than you normally would

Personally I wouldn’t use deck blocks. I built my deck about the same size and not attached to the house. I’m in Florida so no frost line but I still dug to 24” for footings. My only advice is rent an auger, I didn’t and regretted it. My back still hurts just thinking about it. 😀. Good luck
