I made another small serving for myself. Added ground cayenne and cracked pepper. The flavors and heat are a nice. The micro crunch from the pepper corns is a nice addition as well!

I think most of the white bits are unmelted pieces of cotija. It comes out of the bag like a powdery, mealy type of dry cheese.

The cheese I used was cotija, cheddar, and parmesan.

I made it up. 1) make a roux out of butter and flour. 2) add milk while stirring. Mix in whatever cheese or cheeses you have. Cut with water if it gets too thick. Dump in a can of drained green chilies, a can of drained chickpeas, and fresh cilantro. Stir. Serve.
