Can you explain more on what the flavor “numbing” is? One time I had some “numb and spicy” pork soup dumplings, and they were insanely good. I just don’t understand the numb part.

szechuan peppercorn, aka prickly ash, has a chemical called sanshool (sansho-ol) that causes a sort of pins and needles sensation. It combines well with hot, can even make you numb so you tolerate more heat. The combination is called [mala](https://en.wikipedia.org/wiki/Mala_(seasoning), which means 'numb/spicy', it's the hallmark of szechuan style dishes. Try some mapo tofu with rice, as good a starting place as any.

It's Sichuan pepper. Aside from tasting "peppery" it has chemicals in it that literally numb your mouth. Apparently that numbing quality is thought of as a separate flavor in Chinese cooking.

There is a restaurant nearby that has a dish called "mysterious flavor chicken" which I am now tempted to order (and I need to do it fast, if I do -- they're closing permanently today after 40 years in business and I have to run up there and get my order in ASAP.)

Doubt it would work well with many, I would need to know what specifically is in the brown sauce.

Funny story I went to a Chinese restaurant once and ordered lemon chicken and they came out with big fried chicken legs and a bowl of lemon sauce on the side

I make brown sauce all the time. Its a little different each time but is usually some combination of soy sauce, brown sugar, hoisin, garlic, chilies, rice wine vinegar, fish sauce, sesame oil etc.

It taste good on every protien, veggie, rice, noodle etc. you can think of.
