The towns in the Greater Danbury area (Northern Fairfield County) are very nice and fit most of your criteria; Ridgefield, Brookfield, Bethel and Newtown to name a few places. They’re just over an hour from NYC, have excellent schools and community feel, and offer a great value if you don’t need to commute into the city every single day.

New Haven may be a good option for you. Lots of great restaurants and cultural events, and you get a great mix of people (not just young families and retirees). Stamford is also a great city, but since you can work from anywhere and don’t need to pay a premium to be less than one hour from NYC, your money will go farther in the New Haven area. Metro-North will still get you to NYC from New Haven in under two hours when you want to visit.

You were right about the toll on 87 in Yonkers; it apparently is in both directions. The toll in New Rochelle is only northbound. I just checked the official NY state thruway map. I deleted my initial reply to avoid giving the OP incorrect info. Moral of the story: don’t trust Google Maps for toll prices (it gave me wrong info)
