I'd say Purina Hall of Fame by Propagandhi. It's a punk track that starts fast then slows in the middle before hitting my favorite lyrics of all time followed by the most cathartic guitar solo I've ever heard. It rules. Post-rock and post-metal are also great subgenres for this. A Hail of Bombs by Red Sparowes, From Roots to Needles by If These Trees Could Talk, and Weight by ISIS all have incredible build ups and climaxes.

And Then There Was Silence by Blind Guardian is one of the best pieces of music ever written, a slow burn clocking in at 14 minutes I think? Surprised it's not already been mentioned here.

The Smoke of Many Fires by Be'lakor is death metal rather than power metal, but very similar in that it's a rather long song (~10 minutes) telling a story with an incredible climax, and is also one of the best pieces of music ever written.
